In the cool climate of northeastern France, winemakers in the Champagne region produce a tasty, bubbly wine we also know as Champagne.

Some of the terms used to describe the sweetness of French Champagne (or other sparkling wines) can be confusing. The most commonly terms are Brut, Extra Dry, and Demi-Sec. Champagne labeled Brut is actually the driest classification and many include even drier examples such as Extra Brut or Brut Nature. Extra Dry despite what many people think, is actually a tad sweeter than Brut. Demi-Sec, rather uncommon in the Champagne region, is a semi-sweet style of French wine.

Champagne can be made with varying percentages of Pinot Noir, Chardonnay and Pinot Meunier grapes, and the production method is called Méthode Champenoise. After the primary fermentation of the grape juice is finished the result is bottled and yeast and some type of sugar are added to create a secondary fermentation in the bottle. It is during the secondary fermentation that these magical bubbles in Champagne occur.

Notable French Champagne houses such as Krug, Veuve Clicquot Ponsardin, Bollinger, Louis Roederer, Tattinger, and Moet & Chandon, that produces the iconic Dom Perignon champagne, have been refining their craft for over 200 years in some cases.

    The NV Brut Special Cuvée opens with elegant, well-delineated aromas of honey, brioche, roasted nuts, orange zest, flowers and peaches, of which appear on the palate in a classy, finessed expression of the house style. This is an especially refined and delicious NV Champagne. The Special Cuvée is roughly 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier (2004, 2003) sourced from a variety of vineyards. Bollinger adds 5–10% of reserve wines (in this case from 1995 and 1996, aged in magnums) which gives this offering its lovely complexity. The dosage is 7–9 grams per liter. This is Lot: 807704, disgorged towards the end of 2007. Anticipated maturity: 2008–2012.

Seamless and vinous, the palate is medium to full-bodied with an elegant mousse and a lively, fresh finish.     Disgorged in June 2021, Larmandier-Bernier’s 2014 Extra-Brut Blanc de Blancs Grand Cru Les Chemins d’Avize is still tightly wound, unwinding in the glass with aromas of citrus oil, crisp yellow orchard fruit, almond paste, vanilla pod and freshly baked bread. Medium to full-bodied, seamless and complete, it’s deep and concentrated, with ripe but racy acids and a pretty pinpoint mousse, concluding with a long, chalky finish. This is a more charming, immediate rendition of this cuvée than its 2013 predecessor, but it will still reward at least a few years on cork. (William Kelley)

    The 2014 Extra Brut Les Chemins d’Avize Blanc de Blancs Grand Cru is fabulous. Rich, ample and potent, the 2014 possesses tremendous density from start to finish. Apricot, spice, dried flowers, graphite and lemon confit all build in a Champagne of enormous resonance. The pedigree here is evident. Chemins d’Avize is a blend from the Chemin de Plivot and Chemin de Flavigny lieux-dits. It was vinified in neutral oak and bottled with dosage of two grams per liter. Disgorged: June, 2021.     The NV Brut La Française is based on 40% Chardonnay, 35% Pinot Noir and 25% Pinot Meunier, all fermented in stainless steel and blended with 30% of reserve wines. It is a pure, fresh and well-structured Brut that seems more elegant, complex and round than the Brut Réserve. The persistent finish is clear, fresh and well structured, with refreshing lemon flavors and a nice grip. My sample was said to be bottled in 2014 and disgorged in March 2017 with nine grams of dosage. There is good length and tension here as well as sweet cherry aromas in the aftertaste.

Dried pear, chamomile, mint mad dried flowers are some of the many notes that run through this super-expressive Champagne. This release is a 50/50 blend of 2015 and reserve wines, Chardonnay and Pinot Noir, also in equal measure. Disgorged: December 2017.

    Tasted for the third time now, the 2006 Blanc de Blancs Grand Cru Millésime Prestige offers a delicious and matured bouquet of ripe fruits, cream, caramel and brioche flavors. (The wine tasted here is from lot L6280NG09, which was disgorged in October 2016 after 9.5 years on the lees, with a dosage of less than five grams per liter.) It is pure, fresh and mineral on the palate, highly elegant and finessed but also intense, very well structured and provided with a perfect roundness in the long, clear and cleansing but also complex finish. This is by far the best lot I have tasted so far; it’s simply a gorgeous Champagne that I’d love to have with a never-ending Sunday morning brunch. Four percent of the base wines were fermented in oak, the rest in stainless steel. The grapes were sourced in six grand cru villages such as Le Mesnil-sur-Oger, Oger, Avize, Cramant, Chouilly and Oiry. Tasted on a dark and rainy November evening 2017. (Stephan Reinhardt)

    This is very structured and framed with an almost red sensibility. Very phenolic. Full-bodied in a tightly wound ball with so much going on. Very pinot like. Mineral and stone. Shell and stone. Iodine. Vinous. The bubbles just fade into the finish of the wine, which goes on for minutes. Turns to toffee and salted caramel with time in the glass. One for the cellar. Great length. Blend of 53% pinot noir, 25% pinot meunier, 22% chardonnay. Disgorged in beginning of 2020. Drink or hold.

    The 2008 Vintage is a nervy, electrifying Champagne, the likes of which has not emerged from Krug’s cellars since the magical l1996. Bright and sculpted, with tremendous precision, the 2008 dazzles from start to finish.     A vintage Champagne from this producer is rare. But 2008 was a great year in Champagne and that shows in this intense, still amazingly young wine.     Krug’s 2008 Brut is slated to be released at the end of 2021, but any readers who purchase the wine will need to exercise considerably more patience if they are to enjoy it in its prime, as it is very tightly wound out of the gates. Unwinding in the glass with a youthfully discreet bouquet of clear honey, dried fruit, walnut oil, Meyer lemon and rock salt, it’s medium to full-bodied, deep and incisive, with a racy spine of acidity, a pretty pinpoint mousse and a penetrating, saline finish. The polar stylistic opposite of the rich, demonstrative 2006, the 2008 is a rather understated, taut vintage from Krug that isn’t as liberally endowed with the house’s characteristic toasty patina as its immediate predecessor.

    From a cool, relatively dry year in Champagne, Krug’s 2008 is blended from pinot noir (53 percent), pinot meunier (25 percent) and chardonnay (22 percent). Released in the fall of 2021, the wine is dense and concentrated, still tightly wound. While it shows some savory maturity, the wine’s meaty intensity suggest its evolution has barely begun. Great Krug vintages last for decades, and this one should evolve into a classic.

    The NV Rosé 22ème Edition captures all the best of the Krug house style. Wonderfully fresh and vibrant, with a classic hint of reduction, the 22ème is simply pristine. The Krug Rosé has typically been a Champagne of freshness and tension. That is very much the case here. Readers should expect a crystalline, taut Rosé full of citrus, white flowers chalk and red berry fruit, all supported by veins of salivating minerality and acidity. This is such a compelling and alluring Rosé. This release is based on 2010, with reserve wines back to 2005, a relatively compact range of vintages. I loved it.

    Pale copper-orange. Extraordinary, Chambolle-like nose hints at wild strawberry, coconut, lanolin, nut skin and Christmas spices. Very fine mousse. Extremely rich but very dry, with complex but subtle flavors of strawberry, ginger, nutmeg, cinnamon and smoke. Bright, harmonious acidity. Very dry but clinging and penetrating on the aftertaste. Consistent with Krug’s other releases, this utterly singular Champagne is more wine than rosé.
