In the cool climate of northeastern France, winemakers in the Champagne region produce a tasty, bubbly wine we also know as Champagne.

Some of the terms used to describe the sweetness of French Champagne (or other sparkling wines) can be confusing. The most commonly terms are Brut, Extra Dry, and Demi-Sec. Champagne labeled Brut is actually the driest classification and many include even drier examples such as Extra Brut or Brut Nature. Extra Dry despite what many people think, is actually a tad sweeter than Brut. Demi-Sec, rather uncommon in the Champagne region, is a semi-sweet style of French wine.

Champagne can be made with varying percentages of Pinot Noir, Chardonnay and Pinot Meunier grapes, and the production method is called Méthode Champenoise. After the primary fermentation of the grape juice is finished the result is bottled and yeast and some type of sugar are added to create a secondary fermentation in the bottle. It is during the secondary fermentation that these magical bubbles in Champagne occur.

Notable French Champagne houses such as Krug, Veuve Clicquot Ponsardin, Bollinger, Louis Roederer, Tattinger, and Moet & Chandon, that produces the iconic Dom Perignon champagne, have been refining their craft for over 200 years in some cases.

    The NV Brut Face Nord is a gorgeous, expressive wine. For the Face Nord David Pehu blends 70% Pinot and 30% Chardonnay from Verzey and Verzy, both of which yield nervy, racy wines. The inclusion of 30% perpetual reserve back to 2005 helps fill out the layers while adding notable complexity. Cherry, Mirabelle plum, spice and exotic white flowers give the Face Nord striking aromatic complexity and a touch of exoticism that are so alluring. Disgorged: November 1, 2019.

    Disgorged in November 2019, the latest release of Pehu-Simonet’s NV Brut Grand Cru Face Nord is showing nicely, offering up aromas of white flowers and walnuts mingled with hints of orange oil and crisp yellow apple. Medium to full-bodied, fleshy and incisive, with racy acids and chalky grip, it will unwind further with a little time on cork.

    This is 70 percent pinot noir from Verzenay and Verzy, the balance chardonnay from Verzenay. It’s chalky and has not begun to evolve, showing some toasted almond notes through a smooth texture, pithy and firm. Give this a year in bottle to develop.

    The 2010 Dom Ruinart is truly epic. It’s also an eye-opening wine. And I do mean wine. Because the first impression is really of wine more than Champagne. The 2010 signals a major shift in philosophy, as Dom Ruinart is now aged entirely under cork (rather than crown seal) as it was back in the early 1960s. Lemon peel, white flowers, mint, crushed rocks and white pepper all race across the palate, announcing a Champagne of stature, breed and pure class. All the elements build as the 2010 crescendos into its intensely saline, mineral-drenched finish. The low dosage of 4 grams per liter is perfectly judged. I try to avoid the tired clichés that make comparisons with Burgundy, but it is impossible here. The best way I can describe the 2010 Dom Ruinart is that it tastes like a great Corton-Charlemagne with bubbles. Chef de Caves Frédéric Panaïotis has poured his heart and soul into Ruinart since arriving in 2007. He richly deserves all the accolades he will surely garner for this masterpiece, an achievement that is made all the more notable by the challenges of the growing season.     A mineral-driven Champagne, creamy and compact, this deftly meshes a layer of smoke, chalk and saline with detailed flavors of glazed apple and apricot, roasted hazelnut and ginger-infused pastry cream carried on a raw silky mousse. The fine texture softens the firm spine of chiseled acidity that structures the wine, and hints of white blossoms, Meyer lemon and oyster shell play on the finish. Disgorged November 2020.     The first vintage since the 1960s to see tirage under natural cork in lieu of crown caps, the 2010 Dom Ruinart Blanc de Blancs was disgorged in November 2021. It’s showing nicely, over-performing for the vintage, displaying aromas of yellow orchard fruit, toasted nuts, spices, smoke, dried white flowers and iodine. Medium to full-bodied, pillowy and layered, with impressive concentration and chalky structure, it concludes with a long, saline finish. (William Kelley)

    Almost like a white, with a smoky and flinty nose. Dried lemons, cedar, smoked almonds, spiced apples, hazelnuts, salted butter and toast. Tangy and sharp, yet creamy and buttery, too, with fine bubbles. Hazelnuts at the end. Disgorged in February 2021. Drink or hold.

Shows a strong mineral quality on the penetrating finish, which features a hint of toasted almond. The bottling that I reviewed last year had no disgorgement date on the back label but this one does.

    Agrapart’s NV Brut 7 Crus is simply gorgeous. Rich, creamy and inviting, the 7 Crus hits all the right notes. The 7 Crus doesn’t quite have the focus or energy of the top wines here, but it is incredibly delicious, approachable and relatively easy to find. This may very well be the finest release of the 7 Crus I have ever tasted since this cuvée debuted a few years ago. The 7 Crus is 90% Chardonnay and 10% Pinot Noir.     The NV Grand Cru Cuvee 1911 emerges from the glass with the most haunting of perfumes. Sweet rose petal and jasmine are some of the nuances that emerge over time. Despite recent disgorgement, the purity of the fruit and the extraordinary elegance of the mousse are hard to miss. This is an exceptional, elegant version of the 1911 that should drink beautifully for years to come. The bottle I tasted needed quite a bit of air to open up, so readers should be patient with the wine at this stage. The current release of the 1911 is 100% Pinot Noir, 50% 2002 vintage and 50% a solera blend that dates back to 1998. This is Lot L05, disgorged October 4, 2010 and bottled with dosage of 6 grams per liter. Anticipated maturity: 2012–2020.

  14. Champagne Billecart-Salmon Cuvée Nicolas François Billecart Brut

    Created in 1964 as a tribute to the house’s founder, the youngest release is the 2006 Millésime Brut Cuvée Nicolas François, a blend of 60% Pinot Noir from premier and grand crus from the Montagne de Reims and the Grande Vallée de la Marne and 40% Chardonnay from the Côte des Blancs. Almost entirely fermented in stainless steel (only 5% was vinified in oak barrels) and aged for 11 years on the lees, this is a beautifully ripe and rich yet pure Champagne with ripe fruit flavors intermixed with chalky notes and brioche/nougat flavors. The palate is intense and concentrated in its rich fruit and substantial depth but also tight, highly elegant and perfectly balanced. The typical finesse of Billecart-Salmon is palatable as well as amazingly pure, with the persistent structure of a great Champagne. The 2006 already drinks dangerously well, but there is no need to hurry, this will go a long way. My sample is from lot L 193A815 45578 that was disgorged in April 2018. Tasted in November 2018.

    A rounded vintage, with very attractive white peach, apricot and nectarine fruits as well as lemon and yellow grapefruit, dried flowers, orange rind and some clotted cream. The palate has an assertive, sturdy and punchy feel to it. Bright acidity that’s lime sorbet-like. Good length and plenty of fresh stone fruit flavors. Fleshy and lively. Drink this now.

    Named after the founder of the house, Nicolas François Billecart (who married Elisabeth Salmon), this wine is now at its peak. It is poised between fresh apple fruits and broader, riper maturity. This balance gives a ripe wine hinting at toast and almonds while still with a dry aftertaste. Drink now, although in 2019 it will be even better.

    The 2009 Vintage is another stellar wine in this range from Billecart-Salmon. This is the first time the Vintage includes Meunier in the blend. That approach has worked out so well here. Resonant and generous, the 2009 is so expressive today. The low dosage of two grams per liter is expertly judged.
