In the cool climate of northeastern France, winemakers in the Champagne region produce a tasty, bubbly wine we also know as Champagne.

Some of the terms used to describe the sweetness of French Champagne (or other sparkling wines) can be confusing. The most commonly terms are Brut, Extra Dry, and Demi-Sec. Champagne labeled Brut is actually the driest classification and many include even drier examples such as Extra Brut or Brut Nature. Extra Dry despite what many people think, is actually a tad sweeter than Brut. Demi-Sec, rather uncommon in the Champagne region, is a semi-sweet style of French wine.

Champagne can be made with varying percentages of Pinot Noir, Chardonnay and Pinot Meunier grapes, and the production method is called Méthode Champenoise. After the primary fermentation of the grape juice is finished the result is bottled and yeast and some type of sugar are added to create a secondary fermentation in the bottle. It is during the secondary fermentation that these magical bubbles in Champagne occur.

Notable French Champagne houses such as Krug, Veuve Clicquot Ponsardin, Bollinger, Louis Roederer, Tattinger, and Moet & Chandon, that produces the iconic Dom Perignon champagne, have been refining their craft for over 200 years in some cases.

    If chardonnay could be a red wine, it might have the red fruit flavors of this blanc de blancs. Perhaps it’s the floral aspects that turn its chamomile and yellow flower notes toward violets, or the deep earth tones adding color to the flavor. The fruit is persistent, sunny in the middle, then shaded by an almost tannic character to the lees that places the wine with food, particularly roast veal.

    This is a fabulous version of Ruinart’s NV Brut Blanc de Blancs. The wine seems fresher, more vibrant and less obviously sweet than in the past, all of which makes this a far more interesting wine. The trademark profile of lemon, jasmine and green apples is very much in the forefront while the wine’s textural finesse and length are both first-class. This release of the NV Brut makes a great introduction to the wines of Ruinart, Champagne’s oldest house. This is Lot LAGJSAF. Anticipated maturity: 2011–2014.

    Based on the 2018 vintage, this wine includes reserves dating back to 1988. Most of the components come from Le Mesnil-sur-Oger; all grow on chalk. The wine seems to layer that chalk’s seabed heritage into beautiful richness, as it combines different parcels aged in stainless steel, oak barrels or concrete. “It reminds me of architecture,” Tina Vaughn of NYC’s The Simone said. “The smell of a building site—granite, concrete, steel beams. Very Ayn Rand.” Or is it the architecture of ancient fossilized soil, along with a softer impression, one that made me smile at the glory of Champagne.

    The NV Blanc de Blancs Cuvée de Réserve is such a gorgeous wine. Bright, mineral and savory, with attractive tropical accents, the Cuvée de Réserve offers striking nuance and tons of class. This release is based on 2016, with reserve wines that go back to 1988. Partially blocked malolactic fermentation helps preserve a measure of freshness, but what impresses most is the wine’s total sense of balance. For readers who want to know what the Côte des Blancs is all about, without spending the money for an elite cuvée, this is the place to start. In a word: impressive. Dosage is 6.5–7 grams per liter. Disgorged: March, 2020.

    Straw yellow and with a golden hue in color, the Pol Roger NV Réserve Brut displays a brilliant, perfectly ripe but also fresh, highly elegant and refined fruit aroma on the nose; think of cooked pip fruits like pears and apples, but also quince-confiture and yellow stone fruits, such as apricots and peaches intermixed with vanilla, brioche (pain aux raisins), some nutty flavors and also some white floral notes. On the palate, this medium-bodied Brut is as round (if not pretty sweet) and fruit-driven as it is delicate, pure and very elegant. The mousse is deliciously fine and leads this charming and perfectly balanced fizz to a long, aromatic, stunningly dry and slightly mineral, impressively long finish. This is extremely well done Champagne from equal parts of Pinot Noir, Meunier and Chardonnay sourced in 30 different crus. This may very well be the finest release of the 7 Crus I have ever tasted since this cuvée debuted a few years ago. The 7 Crus is 90% Chardonnay and 10% Pinot Noir. Racy citrus and orchard fruit flavors gain flesh and weight with air, picking up deeper melon and nectarine qualities. A floral note gains strength with air and carries through a long, gently chewy finish, which echoes the pear note.

    Jean Laurent’s NV Brut Blanc de Blancs Disg. 3/2013 leads with a greenhouse-like sense of flowering and leafing things along with toast, lemon zest, and a whiff of outright yeastiness. Generously apple-y and lemony on a polished palate and with a discreet note of perfectly supportive sweetness, this finishes with toast-, salt, bitter herb- and apple pip-tinged fruit juiciness, bound to give pleasure over at least the coming year.

    The NV Brut is a gorgeous entry-level offering. The flavors are brisk and finely cut in this chiseled, crystalline Champagne from the Aubry brothers. Pear, green apple, lemon oil and white flowers add to an overall impression of brightness and tension. Aubry’s straight NV Brut is once again one of the very finest wines in its peer group. I rarely miss a chance to drink it. The current release is a blend of 50% 2014 and 50% reserve wines, with a bit more Meunier in the blend than is the norm. Disgorged: June 2017. A new-format non-vintage that designates the year of the 242nd harvest, 2017, plus reserve wine of 2009, 2011, 2013, 2014, 2015 and 2016. Drink or hold.

    So much for the composition and concept of the new NV Brut Collection 242, but how does it taste? This debut release is very impressive indeed, wafting from the glass with notes of pear, peach, ripe citrus fruit, toasted almonds, fresh pastry and white flowers. Medium to full-bodied, pillowy and textural, it’s concentrated and layered, with lively acids, an enlivening pinpoint mousse and a long, sapid finish. Brut Premier was already a very persuasive wine, but the new Brut Collection nevertheless represents a step up.

    This first release of Roederer’s new Collection is based on the 2017 harvest, the 242nd for the house. This wine replaces Brut Premier. Jean-Baptiste Lécaillon bases the Collection blend on a “perpetual reserve,” held in stainless steel since 2012, with wine added in each vintage: half pinot noir, half chardonnay, none of it having undergone malolactic conversion. For the 242 blend, he included some oak-aged reserve wines before selecting individual parcel wines from partner growers, focusing on chardonnay, along with some meunier and pinot noir from the Marne Valley. The final blend is 34 percent perpetual reserve, 10 percent oak-aged reserves, and 56 percent from the 2017 harvest. While Brut Premier was a more spherical wine in the mouth, Collection 242 is finer, with greater length of flavor and more energy. The scent is floral and seashell-mineral, the texture caressing, then tense. My notes and the comments from the panel are all about the wine’s harmony and structure, without a word about fruit. It’s an exciting wine to taste and to drink.

    The NV Collection 242 is a new wine from Roederer that replaces the Brut Premier in the range. The Collection (which now will be numbered by harvest) is a blend of three components: a perpetual reserve done in the classic non-malo Roederer style, reserve wines in oak with a touch of malo, and a base vintage, in this case 2017. That blend results in a NV Champagne that offers lovely richness and resonance, with plenty of yellow orchard fruit and floral character. Whereas Brut Premier was typically a focused, nervy wine that, while consistently excellent, also was not always in line with the Roederer house style, the 242 tastes more like a Roederer Champagne in terms of its complexity. Incidentally, there is no Vintage, Cristal or Cristal Rosé in 2017, so all the best lots went into this bottling. Dosage is 8 grams per liter, so lower than the 9 or so that was typical for recent Brut Premier and much lower than the 12–13 that was once customary. The 242 was also bottled with a bit less sugar than the norm, which results in lower atmospheres of pressure in the bottle and silkier texture.
