    Vivid onion skin color. A highly perfumed and complex bouquet evokes fresh citrus and pit fruits, strawberry and pungent flowers, along with building mineral and succulent herb elements. Shows excellent clarity and depth to its juicy red fruit, nectarine and mango flavors, which are sweetened by a background of vanilla note.     In 2021, Peyrassol credits the microclimate at their estate for the late budbreak that evaded late-April frosts, also escaping a fire (merci, le mistral), a hailstorm in nearby Pignan (blocked by hills) and flooding. More than a vintage survivor, this wine is chewy and immediately pleasurable; it captured our panel’s attention in the sweetness of its fruit. Its substantial weight would work well with a range of dishes, or stand as a meal on its own, letting it saturate your mouth, cherry-blossom accents peeking out around the edges of the finish. Its complexity is subtle but present, like a carefully-measured craft cocktail.
