    The kickin’ chicken was a total chameleon: on the first pass, it reflected deep, round, almost sweet aromas, like fruitcake and spice, and equally sweet flavors of toffee and orange peel. But on the second pass, especially with ice, it became more brisk, dry, and light. However, the lingering, tannic bite and orange-amber color remained constant.
