    In 2021, Peyrassol credits the microclimate at their estate for the late budbreak that evaded late-April frosts, also escaping a fire (merci, le mistral), a hailstorm in nearby Pignan (blocked by hills) and flooding. More than a vintage survivor, this wine is chewy and immediately pleasurable; it captured our panel’s attention in the sweetness of its fruit. Its substantial weight would work well with a range of dishes, or stand as a meal on its own, letting it saturate your mouth, cherry-blossom accents peeking out around the edges of the finish. Its complexity is subtle but present, like a carefully-measured craft cocktail.
